This was sent to me in a PM by BrokenolMarine after he read my post about my extended "Mr. Mom" stint. I finally got around to whipping it up last night with a package of chops from the hog that I took with my Big Boy in Florida. I really wish I hadn't waited that long and I'll be preparing all of my remaining packages of chops in this manner.

I just can't keep it to myself. The butter and brown sugar certainly jacks up the calorie count, but dang, it's good! I went with the crushed pineapple and smeared it all over them.

Here it is in his own words:

Pineapple porkchops...

Line a baking pan in foil... notice a theme? I hate washing the darn things. Spray with pam.
Season pork chops on both sides with salt and pepper to taste. (Better to UNDER season than over season) you can always add salt and pepper later... but hard to take it back. :D

In a small saucepan, melt butter, one stick, add 1/4 cup brown sugar, and stir over low heat until the brown sugar melts. Pour over the pork chops. Add crushed or chopped pineapple, then cover with foil, bake at 400 for about 45 minutes.

Juicy pork chops with sweet tangy flavor.

If I remember correctly, the mayonnaise chicken went over well too.
If so, I'm two for two! :lol:
