Is anyone else making the traditional St. Patrick's Corned beef and cabbage?

I got a couple of corned beefs, a cabbage, potatoes and carrots for St. Patrick's Day this coming Tuesday. I had forgotten but saw on the calendar and picked some up to have.
My plan is to crockpot it all before I leave for work in the am.

It's been a few years since I've had it, so I'm hoping it comes out well.

A long, long time ago, in what seems like another life, my wife and I regularly "corned" beef briskets in the basement in a covered crock filled with our favorite brine of kosher salt and spices. St. Patrick's Day was never a thing, but we made some wicked corned beef in our house! Of course, we ate it braised with cabbage wedges and potatoes, but I mostly enjoyed it thinly sliced for sandwiches on seeded rye. Mmm. Those were the days, my friend. We thought they would never end. Those were the days.

Certainly. My Irish bride (whose family has been here since before the Civil War) prepares an Irish feast ever Saint Paddy's Day.

Oh yes...Carol is very much into tradition, especially where meals are concerned. We will be having corned beef and cabbage for sure.

Absolutely. We have a corned beef in the fridge now and will be picking up some red potatoes and cabbage. My wife’s name is Erin and her mother’s maiden name is Clancy. Can’t get much more Irish than that. My great grandmother on my dad’s side immigrated from Ireland and the family name is Boyles. My dad always called her “Mother Boyles”.

My wife is having her cataract surgery on Tuesday so we may postpone one day.

Leftover sandwiches on Jewish Rye are fantastic and I’m looking forward to them.

The ophthalmologists have cataract surgery down pat. I had both eyes done a few years back and it was a cake walk. I am confident Ms. Hatchdog will have a good outcome.

Tell her the only regrets she will have is failing to do it earlier.

Agree completely, this is her second eye and the first is doing great. Our eye doc has been keeping a close “eye” on her watching her cataracts progress and we feel this is good and early surgery.

Got the red potatoes and cabbage home and ready for the pot! A loaf of Jewish Rye too, the last loaf at our local grocery store.
