in an effort to reduce our time spent cooking, then having to clean up and with this being our next to last night in Texas on this trip, take put Pizza was in order .... for our last night (tomorrow) we plan to eat out at the local Cracker Barrel ....

Nice here today so I fired up the grill, Filet Minion, & shrimp on the barbi, baked potato and vegetable medley inside, Tasted great

Try this with chicken breasts;
Mix together,1/2 c mayonnaise, 1/3c shredded parmesan cheese, 1/2tsp garlic powder, spread over 4 breasts, coat all with seasoned bread crumbs
Bake @425 for 15-20 minutes on a sheet or shallow pan (don't crowd) till lightly browned.
Takes plain boring chicken breasts to a new level
adjust seasonings to your taste I always add more cheese

Looks great, particularly the bread crumbs. I’m a texture eater and like crispy outers and tender inners on food. I put olive oil, seasoned pepper and season salt on the chicken, baked and finished under the broiler and it still was not to my liking.
Today I’m taking a simple route with the pending wind storm and putting a chuck roast with potatoes in the crock pot. Not a good night for grilling, the grill might blow away.

Last night was a chuck roast and potatoes in the crock pot. Came out great, tender and tasty. Should be enough for leftovers tonight.

Caught a couple channel cats yesterday. About 2 lb each. I breaded bites and fried one of them. Very tasty. I’m really happy spring is warming up.

Should have taken pictures, but didn't think of it.
My Wife is dubious about my new Blackstone Griddle. To her meat needs to be grilled, anyway
last evening I took the T-Bones and with some steak seasoning I put them on my screaming hot
griddle. About four minutes to a side. They caramelized perfectly and tasted great. The one I
had covered the entire plate and I couldn't eat it all.
Maybe this will change her mind.
Twice baked potatoes and Broccoli with a nice cold local beer.
