What's for supper?

You guys eat so healthy I’m embarrassed to show last night’s dinner. But what the hell, we enjoyed pork steaks from the skillet with baked potatoes and homemade pork gravy. Very unhealthy but also very tasty.

ain't nothing wrong with fried pork and baked taters .... in fact, baked taters with butter and Dean's French Onion Dip were on our menu for tonight .... along with boiled cabbage, shrimp left over from last night, and Cowboy Caviar ..

Pizza took the beach buggie down the beach and picked up one to go

Last night I made my pizza poorboys. There used to be a local pizza shop that made these and they were wonderful. And better than mine of course. Sadly they went out of business many years ago. Simple to make, spread some pizza sauce on a roll, cover with cheese and whatever toppings you like, pepperoni for me and bake open top at 350 for 20 -25 minutes. Let cool slightly and eat either open face or as a sandwich. Mmmmmm

A couple evenings ago my wife fixed one of my favorite dinners. She fixed canned Fox squirrel along with some home fries and baked beans. She also eats the game I hunt and bring home which I think is great. I have friends wives who will not even cook game let alone eat it. One of my friends wife told her kids to never eat anything at our home that we even eat Chipmunks. When I found out she told them that I told her Chipmunks are off the menu here because my wife thinks they are cute but field mice are very tasty and plentiful. She wasn't backward about asking me to give her a few ring neck Pheasant every year which I did one year and then she said they were dry compared to chicken. I told her to learn to cook game and until then go ahead and buy chicken. Well any way my wife and I ate the whole quart of the Fox squirrels that were dated 2004 and they were all so tender they fell apart and tasted like I had just got them the day before. Canned squirrel and rabbits are hard to beat. I would rather have canned squirrel than a big expensive steak any day. It helps to have a wife that is great at fixing game and fish to perfection.

Pheasant is dry. My Mother used to par boil them and then a quick roll in seasoned flour and fry till crisp in a frying pan.
They were really good but look out for buck shot.
When I lived in Virginia I had a friend that used to love squirrel. We'd shoot a few and he'd fix them the same way my Mom
fixed the pheasant, then served them up with squirrel gravy. Really good but neither of our wives at the time would cook
or eat them either.

Carol cooked a big old chicken Sunday evening, (which I swear was an old rooster), and she had a lot of chicken left over,
so last night she used a Paula Dean recipe for chicken salad. It was pretty bad. I was wondering how to tell her that
without getting into trouble, when I noticed she'd stopped eating. I asked if she wasn't going to clean her plate and
I got the look. Know what I mean? Well anyway, I asked her not to make it again and she started laughing and agreed.
