I cranked up my Instant Pot last nite, and fixed some beef stew.
This morning, early, it was done. Sure does look & smell good.
I'll give it a go later. Gonna be nice for football weekend.

For tonight's supper I will be making a pot of Canadian cheese soup, using the JL Hudson's recipe (now Macy's) with some homemade Brioche bread from my son. This stuff will warn the belly and the soul

Seriously I make a beef veggie soup that I love but it is tomato based with a large beef soup bone.
I add carrots, onion, celery, green and red peppers, and a lot of cabbage. Yeah, cabbage. I love it.
Then of course there has to be some jalapeno as well to brighten it up a bit.

Feeling lazy...so tonite is Sushi order out nite. I know...I know, many here say YUK!
We love it though, and it helps keep Carol from having to cook, as she is working hard preparing to enter tax season.
I may have to start doing some of the cooking as is usual this time of year. I guess it's worth it seeing as I get my taxes prepared for nothing.

I may not like artichokes, but I do like good sushi. We have a Japanese restaurant not too far away that has a Bento Box which includes sushi.
I do like it a lot.
Tonight we are going to our favorite Supper Club, the Ranchero, https://www.facebook.com/rancherosupperclub , which is back open this week.
Sadly I can't have my martini or baked potato with sour cream and butter until this darn infection goes away.
Have to drink a diet cola and mixed veggies.

I'm like you, my wife is an attorney and I get all that tax work done, and all I have to do is review the docs and sign.

trust me, I did my part .. .. I enjoy reheating burgers for a late night snack .... its just as easy to grill a bunch so generally cook extras ..

Seared NY Strip Steak, medium rare, with roasted, caramelized cherry tomatoes and Chardonnay wine.

Last summer I froze several dozen cherry tomatoes on a sheet pan in a single layer, then vacuum sealed them. Today, I defrosted them and discovered that they were tasty, but quite soft. So I decided to roast them drizzled with olive oil, seasoned with salt and pepper in a single layer at 350° for 45 minutes in my convection oven. Wow! Tomato candy! So good.

Went pistol shopping last night and Sportsman's Warehouse is right next to Olive Garden. I mentioned to my friend that I have never eaten there. She went in and got a menu and after some more shopping we called in a order. Had Seafood Alfredo, was very good and a nice large portion, have enough left for lunch today. Even got a bottle of Sweet Red Roscato. I liked it but I'm not much of a wine drinker so don't know if it was $17 good.
