What's for supper?

We had what we call "spaghetti red" for supper last night. That's pasta with chili instead of a pesto or marinara sauce. That was common for us growing up in SW Missouri.

When I was a single parent raising two teen age boys I used to make home made chili, the boys would come home from school hungry, heat some up, and then micro wave a potato with chili on it just for a snack till supper time. Good stuff.

for our evening meal we fired up our Traveler and grilled/smoked some chicken .... I'm still learning how to best fix chicken on our Traveler .... using our SPG the taste is fine but I'm not happy with the texture .... side dishes of stewed home canned tomatoes and oven fried rice

Left over beans and taco meat on tostada shells washed down with a double margarita. Was a beautiful day here on the gulf

The butcher at a nearby grocery store had these pork clops in the case. They are very thick cut chops stuffed with bacon and cheese. Meat on meat!!

Baked them for 45 minutes at 350 and they came out perfect. Tender juicy and great tasting. Had some fried potatoes and applesauce and it was a great supper.

I should have taken a picture but I didn't. On Sunday we hosted a birthday party for our
now seven year old Grandson. Carol went to a butcher shop called Von Hansen's, which is a local
chain, and bought four filets. They were expensive but boy were the worth the price. She pan
fried them medium rare and served them with a mushroom sauce. You could actually cut them
with a fork.
They always preach about grass fed beef, but let me tell you I grew up around beef cattle and
corn fed beef is by far tastier and more tender.

Yeah they preach about it but Ill take like you the corn fed. If I really want to splurge Ill take the Buffalo.

smoked the second rack of Baby Back Ribs today .... once again, they really turned out well ....

Aaaaaccchhhh! You guys are killing me. Still on my no carb diet and it seems to be working finally.
Slept good last night even after no night cap, although it took a while to get to sleep.
Carol is trying her best to help with the diet and last night it was a hamburger steak with pork and beans,
and an Artichoke! An Artichoke! Good lord, a man could starve to death eating those darn things, and even
when you get to the heart it's only about two bites.

I love artichokes. Dip in butter and then a little mayo...Yum. granted, a lot of work for a small bounty, but, if cooked right, they are good. Those last bites are the best!
