Ok admittedly my first recipe post is not cardiac sensitive-subsequently i only once or twice a year.
This I found just this summer and it is not cardiac sensitive and "something different" for chicken, on the grandkid tour (kids and 1 grandkid liked it.)
Chinese chicken
4 chicken breast-skinned, boned, and cubed (i use about 1.5 pounds)
2 table spoons of butter
1 can of pineapple chunks (20 ounce or whatever size you have)
1/2 cup of raspberry vinegar
2 table spoons of cornstarch
1/2 cup of brown sugar
1 tablespoon of honey
2 table spoons of soy sauce
1 green pepper-seeded and sliced
1 red pepper-seeded and sliced
Brown the chicken in the butter, then keep in pan on the burner no heat
In a pot combine: juice from the pineapple can, vinegar, cornstarch, brown sugar, honey and soy sauce—med heat and stir until thickened.
Add chicken, pineapple and peppers to the sauce
Serve over rice
A little unplanned upgrade this morning. Site is working ok it seems.
