On thick cuts of steak, ( 1-1/2 to 2" ), I usually cook inside in a cast iron or just a heavy skillet. ( pretty hot ).
Then melt Duck Fat in the pan.
I then hold the steak with tongs and sear the edges, all the way around, totalling about 2 mins. I then lay it flat for about 6 or 7 mins a side. When finished, I baste with butter, cover lightly and let it sit for about 10 mins.
Turns out just like the resteraunt or better.

I have to ammend this post, because, I left out one of the most important things that Carol reminded me of tonite, (the rub ). Duh!
We do coat all sides, before cooking by putting ingredients in a spice grinder, or just a coffee grinder as follows: 1/4 cup dried and broken up, Porcini mushrooms, 2 tblsp kosher salt, 2 tblsp whole black peppercorns, 2 tblsp sugar, 1 tblsp garlic pepper and 1 tblsp red pepper flakes. Process all to a powder and coat entire steak after drying with paper towel.
After cooking, dont worry how chard it looks on the outside...what's inside is delicious!!! And yes, we do make cheese steak sandwiches if there is any left.
This is all done before above directions...you will not be sorry. Just use a thick cut, with plenty of marbling.

I don't believe there is a single best way .... what works for is is to let it reach room temp .... if using seasoning that contains salt, hold off applying it until less than an hour cooking .... on your Blackstone or some other cast iron pan, sear both sides .... use tongs to hold the stake so you can sear the sides .... if grilling, do so at a low temp over indirect heat .... until you become confident in your ability to judge the degree of doneness, use a meat thermometer

I’ve gotten fairly good at the cooking part. It’s all that prep work before where I get lost. My neighbor will sometimes drop off uncooked casseroles and I can bake them to perfection. I just can’t put the casseroles together. My baked potatoes also come out perfect they just lack seasoning.

Going to the grocery store is not my favorite thing. But to eat good every day I almost need to shop everyday. I have trouble going to the hardware store to get all the correct parts to fix a toilet. And now I have to master grocery shopping!

I shouldn’t complain because grocery stores are the best place to meet women. Covid19 stopped all my hiking with the YMCA and other walking groups.

I'm a decent cook having been single all my life but the one thing I could never master was making fried chicken as good as my mom's, gave up and just buy it already cooked, probably better for my health as I always get broiled chicken now (except for a very occasional KFC).

My mom was a pastry chef and nobody I've ever known can beat her pies, cinnamon rolls and cookies. Always been disappointed I didn't get her chocolate chip cookie recipe. I'm something of a chocolate chip cookie connoisseur (at least I was before my Diabetes) and no one has ever come close to hers. There was a teacher that would bring goodies every Monday and she was close. She made a brownie style chocolate chip cookie with just a hint of Cayenne Pepper which you would think would be awful but was surprisingly good. You didn't really taste the heat while eating it, just a very slight burn when you finished it.

Actually, depending on how you feel about it, churches are a great place to meet really nice ladies. But be very very careful my friend, it could end up in matrimony.

I lived single for 17 years raising my boys and I learned how to cook really well. Well, we didn't eat out much at all, and we didn't starve either, so I could cook at least edible food.

Then Carol came along almost 26 years ago, and now she doesn't want me in her kitchen. Seems I don't put things back where she can find them.
No problem as she's a good cook and loves doing it.

She does allow me to make my own chili and beef stew which she likes.

Last night was a Seafood Bisque. Heck, I didn't even know what that was let alone be able to make it,
but it's really really good. A thick creamy soup with shrimp and crab in it. She also adds sherry and whole cream.
Add some good crunchy French Bread hot out of the oven.

My wife and I share cooking responsibilities but the biggest argument in our house is whether or not to put beans in the chili. I was raised with no beans in chili, they are a side dish with tortillas. She insists it is not chili without beans, so we compromise, every other of chili is my way and then her way. We also are split on the amount of spice, she thinks catsup is spicy.

let me make a guess, she's Scandinavian. I was engaged to a Swedish Nurse and her family thought'
salt and pepper were too spicy. Lutefisk!

She was very nice, but it didn't work out.

Actually, I CAN go either way. Was born in Texas and thats how I grew up eating it.
Have never had a Chili Dog w/beans though.

I’m throwing a potato in the oven in a few minutes. I like baking them with butter wrapped inside the foil. They come out real moist. I add salt, chives and sour cream before eating. In half an hour I’ll fire up the grill and cook a steak.

It would be nice to have a vegetable and salad too but cooking for one person is too much work and I end up with too many leftovers.

Well look at this way, a potato is a root vegetable, chives are actually a fruit because they grow above ground, and sour cream is really a salad dressing just like, (or close to), some of the ones on the market. Soo, it is a salad if you choose to look at it that way.

And for a healthy drink, tomato juice, with a celery stalk, some hot sauce, Ok, some alcohol too, but it's still a health drink, right?

Tonite we will be having a thick cut Strip steak. We will be splitting it of course.
Also splitting a large baked potato and are looking forward to trying JEBar's suggestion by using French Onion dip, instead of plain sour cream on it. We had never thought of that, but it sounds good to us. Thanks Jim!!

Home made lasagna, DW puts about two pounds of ground beef and sweet sausage, plus the ricotta, mozzarella and Parmesan cheese, oh and the lasagna pasta.
