Dave,
I have the 'paperstone' slate and green knives from Buck. I do not have a complete set of kitchen knives from Buck or anything in a holder like your beautiful set of Buck knives. I prefer to keep my kitchen knives in a drawer too.
So far, I prefer the paring style knives due to my arthritic hand issues. I did not get the steak knives yet from Buck and I am using some older steak knives that I already have.
I don't cut the really LARGE pieces of meat with a butcher knife or a carving knife before the meat gets put into the freezer or after it gets cooked. My husband does that for me now. He prefers his own method of meat cutting with really BIG pieces of hunted or store bought meat.
My BUCK kitchen knives are in the small paring knife style. The one green knife and the one slate knife have 2 3/4 inch length blades. I am very happy with them! They fit my hands well.
My husband likes paring knives too. Plus steak knives of course!
I would like to get up to the BUCK store in Idaho and take a tour at the same time. I know that we have to plan this ahead of time. My husband still has crazy work hours with his 24/7 job. So it will be on some 'vacation day' in the future.
I love your beautiful knives. I would use them and not just wait for the future when you make your final move for your retirement.
Side note: The one Buck PakLite skinner knife that I have in orange fits in my bathrobe pocket. I have one in black too. Both of them have nice little sheaths too. I have had these for some time.
I still LOVE my Ranger #113 skinner knife (Daily carry.) and the #119 Special knife the MOST compared to my other knives in my very small collection of Buck knives. I still own and use my one Ka-Bar knife too. I gave the Buck Vanguard knife back to my husband, again, since I was not USING IT on a regular basis too. It has a black, rubber, textured handle that is good for the outdoors - non slip.
I may give him my Woodsman 102 knife if I don't start using it on a regular basis too.
That BUCK 113 and BUCK 119 get the most use from me on a regular basis. Conceal and open carry.

Yes, Post Falls Idaho now.
Previously, they were in California. It was business friendlier in Idaho so they moved.

I'm thinking of getting a paperstone complete set for my new "digs" and another to give as a thank you gift to someone. I'm definitely planning to reserve the Elks for the Adks. They will be displayed and used in the kitchen. I need to have a second set for the fiance. She puts everything in the dish washer. The Elks do not go in the dish washer, but paperstones can.
Do you like the paperstone's you have? Have you used them much?

I like the BUCK paperstone paring knives very much! We do use them the most now when it comes to our paring knives. We continue to use our OLDER steak knives for now too. We kept our older paring knives for spare use and for camping.
I hand wash the BUCK kitchen knives but I do not SOAK them. When I used to own some OLD STAG knives and a stag cutlery set... I hand washed them and they did not go in the dishwasher. They did not get soaked. I have an old stag knife sharpener now and that only gets hand washed too. My late parents did the same thing with their old stag knives and cutlery sets. Daddy did the same thing with his old chef and butcher knives.
Side note: I did not put in a dishwasher in this small house that I built 'on purpose'. I have hook ups and room for a built in DW but I did not put one in.
The people in the BUCK knife section of the BF forums said that they washed their paperstone knives in the DW with no issues. The two Buck reps that I spoke to on the telephone said that they were DW safe too.
