Three nice channel cats today. They will go on the smoker. It is fun to share.

I tried smoking some bluefish once and ended up with fish jerky.

Yeah, you have to watch the timing. I have the three catfish filleted and on the smoker now. Along with a big rainbow trout I brought from Colorado.

now that looks like a heavy duty smoker .. :) .. in your brine do you use anything other than salt and water .. :?: .. how would you rate the concentration of your brine as compared to ocean water .... how long do you leave it in the brine

Along with that good smoking.
If that rainbow trout were to end up in my cast iron skillet, I definitely would cook it to a blackened fillet!!
Guess I'm thinking about my next dinner. :lol:
