just removed from the smoker, Christmas Eve 2016.... bacon wrapped, hickory smoked Turkey ... :D

Some friends do a variation of this, but wrap a few birds with a whole pig !! :D That will feed a bunch!!

We were supposed to have leg of lamb, but sister in law switched to beef tenderloin and lobster tails!! No complaints from me. And of course the traditional pecan pie !!!

this year's Christmas Turkey has been in the smoker for about an hour .... by midnight I hope to have the cooking temp stabilized and will let her slow smoke until morning .... hope to have her hit 180 internal degrees somewhere around mid morning :D

couple favor from the spices in the rub with the hickory smoke and the bacon is well worth eating .. :D .. 10:40 and the smoker is stabilized at 223 degrees so she's ready to burn till morning

in the real world, when you start cooking while wondering if you have sufficient fuel, you probably don't .... I awoke just before 4AM and checked our wireless thermometer we use to monitor running our smoker out in the garage .... it only took a quick glance to tell that the flame was out .... I have 9 tanks of various sizes and all of them were out .... with our camper moved to our son's, those tanks couldn't be accessed quickly .... thankfully, our daughter's camper is parked on our lot .... it only took a few minutes to remove one of its 30 pounders and connect it to our smoker .... she's now once again smoking away .... 8-)
