I canned some spaghetti sauce a week or so ago. I'm canning more today. The last batch had just a few hot peppers from the garden and Mary thought it was a little spicy. This batch has only sweet peppers. I'll try and post the sauce in another thread.
The applesauce should last for years, but it won't get that chance. It will be eaten well before that. Once canned, any biological process stops and the jar is vacuum sealed. My mother canned every year. It is recommended to consume the canned items within 6 months to a year, but we often had things from a few years. You just check it when you open it. A properly canned item will last a lot longer than "recommended", the same as the store bought canned goods.
