Smoked an 11lb Boston Butt on the Jim Bowie for 18 hours on Labor Day.

It came out awesome, just look at that bark. Tender juicy and delicious!

If you like pulled pork JEbar you should try one.

Go at between 200-220 for about 90 minutes per pound. Spritzing every half hour to hour.

We have done probably 5 or six of them.

If you have the time, you won’t be disappointed.

My problem is maintaining a consistent temperature on my charcoal grill... ;)

This was the first one we smoked.

Didn’t really do any research on how to do pulled pork. It was an impulse buy.

Put it on at noon and after 8 hours we were HUNGRY and pulled it off the smoker. We were only able to get it to about 180 or so. For pulled pork you need to get it to 195-200 for it to break down for pulling it apart. Then you need to cover and let sit for at least a hour or more. We did none of this the first time.

Regardless, we had ham steaks that were awesome and have been hooked ever since.

It’s definitely tough to keep the heat consistent with a charcoal grill.

back when we ran a catering business on the side, we cooked whole hogs and have we towed a pig cooker all the way to South Dakota ....I bought a used Holland Grill Pig Cooker and built an 18' dual axle trailer to mount it on .... we could literally cook three 180 lb hogs at a time .... on occasions when we catered small events we cooked boneless Boston Butts .... haven't done that in a while, thanks to this thread the idea is once again bouncing around the empty space in my head
