Cutting Board Revisited
since working in a family restaurant back in the mid 60's, I've pretty much come full circle on cutting boards .... in the restaurant we use hard wood cutting boards .... some reserved for preparing meats, the others for about everything else .... they were wiped down with a soapy rag and rinsed in hot tap water between uses .... eventually, wooden boards fell out of favor and were replaced by glass, ceramic,metal, or plastic .... we've used several different types and eventually settled on hard plastic .... in recent months, cutting boards made out of various hard woods have been making a comeback .... it does interest me that cleaning them with soap and water is still universally recommended .... doing so with a light application of food grade mineral oil every 2 - 3 months is about what it takes to care for them .... the biggest advantage of wood is, it doesn't dull knife blades any where near as quickly as other surfaces ... after considerable research we are planning to retire our well used hard plastic ones .... it should be here tomorrow and we plan to take it use it both at home and on the road .... given the fact that we use and have a very high opinion of imarku chef knives, we decided to go with their cutting board (link below) .... it should be here tomorrow and it will be immediately put to work .... it will be interesting to see how well it works

agree .... we also like the built in ruler and cutout for a cup on the front side .... its designed to also be used as a serving tray for cheese and such

Nice. Wood is now in my kitchen for meats but I still use plastic for veggies.

I make our own endgrain boards, and have sold/gifted some. Endgrain is self healing (will not scar) and is widely preferred for kitchen use for that reason, and because it will not dull blades. They are more expensive, but will last several lifetimes if properly maintained.
As for cleaning, as you suggested although I'd recommend wiping them down with a 50/50 mix of vinegar and water you can put in a spray bottle near the work area. That will kill any bacteria. The throwaway bleach wipes are also good.
And I think you meant Mineral Oil, not Mineral Spirits. The later is a poisonous solvent used to thin polyurethane and similar products.

Btw, because I have curious streak, I looked up that ebony the board is made from. It's Brown Ebony (aka Guayacan ) Scientific name: Libidibia paraguariensis. Say that 3 times quickly.
Here's the details on it, note that it's not a true Ebony which I suspected just from the picture on your link: Comes from S. America.

cutting board arrived and it appears to live up to its billing .... the wood is nice looking and the workmanship is good .... we plan to coat it with food grade mineral oil and let it sit a couple of days prior to use .... its size is a good match for our campers available counter space

took the time this morning to oil our imarku cutting board for the first time .... we used food grade mineral oil and it really shines .... I admit to being a bit surprised at how little oil it seemed to absorb .... we plan to leave it for a days and then apply another coat .... after that, it will be put to work
