Red beans, rice, & ham. Corn bread. My wife cooked this from scratch every Jan1st for 50 years. Unfortunately, I don't have her cooking skills and it's just me now, so I do the best I can with Zatarains beans and rice mix.
Zatarains makes some good products.
It is, but can be improved with Louisiana Hot Sauce. :)

Have never had turnip greens or boiled cabbage but they both look good and I would try them. About the only food I absolutely would never try was Lutefisk. Being Norwegian/Danish on my mother's side they would always have it at Christmas family dinners, I did like the lefsa they always had with it.

I like this quote from the first link below
"One of the most entertaining origin stories claimed that St. Patrick used the lye-soaked fish in an attempt to poison Viking invaders, who ended up liking it and declaring it a delicacy."

I lived on hospital food for several weeks at Harborview in Seattle. After the first couple of their egg based breakfasts I found it was best to order a donut and cold cereal. Lunch and Dinner weren't much better, if it wasn't for their candy and snack machines I would have lost 20 pounds. Our smaller local hospital actually had decent food, nothing special but OK cafeteria type food.
