for folks who may not know, country Ham is different that regular smoked or baked ham .... it is usually salt and/or pepper cured through a process that predates refrigeration by hundreds of years .... soaking it in cooking oil does help to cut the salt as does rinsing it with clear water and patting it dry prior to cooking

That's a good looking ham. All you need is biscuits and stone ground grits. Just don't forget that red eye.

tonight we fixed our first "country ham" from Lee's Fresh Market ===>
https://leesfreshmarketnc.com/ ....back when we were catering cooking whole hogs, they were known as McLamb's Abattoir (AKA : slaughterhouse) .... when Lee McLamb passed away, his kids built a store on the side of their meat processing building and opened the market .... its been a huge success .... by its very nature country ham is salty .... while theirs is salt cured, it no where near as salty as the ones from large corporations .... a slice of country ham, collard greens, seasoned pinto beans, biscuits and red eye (AKA : coffee) gravy make up a classic deep meal

That's country cookin rhat there. We used to buy a Virginia Ham every year. I miss em. Like everything else, they have gotten dear. We sent a large one to my son in Texas a couple years ago as a gift. $150 plus...
