At our first KC Get-Together dinner on Wednesday, I'm the only person who didn't have a BBQ meal. Instead, I opted for a spinach salad topped with a blackened salmon fillet (garnished with strawberries, feta, and tomatoes). I really like fish, especially prepared this way.
This photo I'm posting is neither the KC meal, nor a meal I planned. The daughter I live with purchases three prepared meals per week from the "Hello Fresh" company. Her younger sister works for this company, and we get a small "deal" on what we buy. These are very nutritious meals, and are delivered to our house each Tuesday fully ready to cook. My youngest daughter fits into her job perfectly -- her undergrad degree was in Nutrition and Wellness, and she loves to eat fresh foods. Anyway, the meal's ingredients are provided; I just do the culinary dance in the kitchen. It's fun.
Since I wasn't home much this week due to the two days of KC shooting, I caught up for lunch today with one of the "missed" meals. It was blackened barramundi with pineapple. I hadn't heard or had this fish before. Man, was it tasty, especially with the southwest spices they provided and a fresh lime squeeze.
So thought I'd post a picture. I don't know if it looks as good as the meal photos JEBar posted while visiting KC...guess that depends on whether one likes BBQ versus fish! I think both choices are great.
I will shortly take a Sunday-afternoon nap. Good way to let the tummy relax, right?!?
