Jambalaya

One of my favorite dishes. Y'all up north might not have ever had this, but if you get down to MS/LA try it out. This is my wife's version- chicken breast (or shrimp/mudbugs/'gator), andoullie sausage, and various spices. It's a bit on the warm side, but down here in the summer it makes you sweat, which cools you off. Best with a good southern beer ( I recommend Abita), lot's of friends, good zydeco, and copious quantities of everything. :D

That's always some fine eating. I haven't been to the Big Easy in a few years so it's been awhile since I've had some. I attended wedding back in 2010 in Ville Platte, LA and the food was wonderful. There's no doubt you folks down south know how to make some outstanding food.

My brother in law makes some of the best. He uses shrimp and it is awesome. Yours looks delicious!

Carol makes Gumbo with much of the same ingredients. We like it spicy so she uses Jalapenos.
We eat a lot of seafood, in fact there is a truck that comes up every two weeks in the Summer
from Galveston and sells shrimp, oysters, crab and red fish in a parking lot. There first visit
of the year is Saturday. They will sell out the truck in two hours.

this thread brought back memories of Gumbo that we used to make .... the recipe shown below was for our first night's meal while in Chesapeake Thousand Trails back in October of 2008 ... some ingredients don't show just how much we used because all of them would be based upon how much you want to use .... we used our Dutch Oven but a crock pot would work just as well :

Meats .... chicken breast, smoked sausage, ham, shrimp

Veggies .... celery, onion, carrots, bell pepper, mushrooms

liquids .... 2 sticks butter melted, dollop of bacon grease, large box chicken broth, large can cream of mushroom soup

brown rice

comments: add shrimp and mushrooms 15 or so minutes prior to dish finishing cooking .... find it works well to line oven with aluminum foil

picture 1 .... melt butter and bacon fat then pour in brown rice

picture 2 .... add chicken, sausage, ham

picture 3 .... veggies

picture 4 .... me hard at work, slaving over a hot Dutch Oven

picture 5 .... shrimp and mushrooms added 15 minutes prior to finishing cooking

picture 6 .... on the plate

I haven't made it in a month or so. Jambalaya is one of those dishes I make regularly too. Mmmmmm
