Tonight is Cajun flavored turkey breast with red beans and rice all cooked in the slow cooker.
Then later in the week will be tinga tosdadas, then new York strip steak with a side of veggies or cous cous. Haven't decided yet...

Doing sheet pan fajitas tonight. Easy, simple and always come out great.

Once a year our VFW Post does a dinner for all members. Last night it was done at a
swanky golf club. Carol and I went all duded up and had a great time although the
food wasn't all that good.
We sat at a table with a couple vet friends and their wives and the joking and shots
were unrelenting. Had a ball.
Now about the food, you would think that a swanky place like that could put out some
good eats, but sadly they fell short. The pre dinner snacks weren't bad. Cheese raviolis and
little meat balls in some kind of white sauce, but the main course left a lot to be desired.
It was a thin slab of over cooked chicken with no seasoning, a small steak not seared and mostly
rare, some undercooked veggies, and mashed potatoes. The potatoes were not too bad.
Desert was some pretty good cake though.
Well, although I left most of it on my plate, it was still a lot of fun.
Oh yes, It all started off with a nice martini, that was the best part.

OK, the Chili is simmering. Here's my recipe.
2 garlic cloves crushed and simmering in extra virgin olive oil.
1 large diced green bell pepper.
2 large diced onions.
1 can tomato paste.
1 can tomato puree.
Several large ripe tomatoes chopped.
1 lb. ground beef, (maybe more later).
2 cans dark red kidney beans. Yup, I like em but you can eliminate them if you like.
2 tablespoons Chili Powder.
1 tablespoon of Cumin.
1 chopped jalapeno pepper with seeds and membranes removed.
1 tablespoon of salt.
1 teaspoon of pepper.
A dash of celery seed.
I combine all of this and let it simmer all afternoon. I will taste it from time to time and may
add more salt, pepper, chili powder or cumin to taste. I also might add another jalapeno depending on
how hot it is. I also use pipping hot water to rinse the tomato paste out of the can.
I've been making this for years and Carol just lets me have her kitchen when its time, usually in the Fall.
We will freeze meal sized portions and it keeps remarkably well.

for tonight we are doing something we for supper that we very, very seldom do ..... that being calling in an order for Pizza .... I wasn't in on the decision making process but I tend to believe our 5 year old grandson was ..
