Great fajita Al!

The second and last steak needed to be eaten today and I didn’t feel like standing out in the freezing weather so I cooked it inside.

First I seared it on high heat for about five minutes a side. Then I threw it in the 350 degree oven for 30 minutes. Ten more minutes with the oven off and it was ready.

It came out slightly under medium and was tender enough to cut with a fork using slight effort hence the ragged edges. The military knife made it cut like warm butter.

Thanks to all for the hints. I never would have thought to bake it. I would have left it on the griddle and smoked up the entire house.

While in town today we stopped into the German butcher shop, (https://vonhansons.com), and picked up two bacon wrapped prime filets.
Later I will fire up the Blackstone, get it sizzling hot, and sear them two minutes to a side. Then I may finish them in the oven.
Planning a baked potato and the wife wants a side of spinach sautéed in butter with a dash of vinegar.
Looking foreword to it. :D

Course it's way below zero and the wind is picking up, but I won't be out in it for long.
I'll dress warm.

Valentine dinner, at home, filet mignon, lobster, au gratin potatoes, asparagus. Warm Chocolate soufflés with a scoop of vanilla ice cream. Delicious.

Man was it cold, but got it done. The filets turned out pretty good but the Wife was unhappy. First of all they had bacon around them,
which I like, evidently she does not, second she didn't think they were done enough so she put them in the oven and then over cooked them. She likes them rare, I can do with medium, that's what they were. I think there's a turf problem. :?
