What's for supper?

Last n ight was a T-Bone steak with cauliflower and a baked potato.
Pretty darn good.

Oh yeah, we did that onion dip thing with the potato. Yep, that's good all right.

Cut up some beef and potatoes and had a simple stew simmering in the crock pot all day. Started it too early as by the time we decided to have some it was a bit over cooked. Still tasted fine and I’ll be having some for lunch today.

we have a nice looking rack in the freezer .... I'm looking forward to getting them out and into our smoker but the weather they are calling for over the next two or three days is way to iffy ...

Carol does these in the oven. Baking pan, on a rack with rub, on a raised rack and about 1/2 inch of water in the bottom.
Ribs do not touch the water. Pan is covered tightly with aluminum foil and cook at a relatively low temp, ( 250 to 275 I think ) for about 3 to four hours. Then the foil comes off and BBQ sauce goes on for about another 1/2 hr or so.
They come out fall off the bone tender. Granted, some like theirs sticking to the bone a bit more and they are not smoked, however, at this time of year, it works very well...love em!

Cowboy beans, Rutabaga, and meat loaf last night.
Pretty good except for the rutabaga. I know, it's good for me.
Carol buys those pork ribs that are higher on the hog. Can't remember what she calls them,
but they are meatier. She lays them over a bed of rinsed Saur Kraut, cover with foil and
bakes them. Then for the last 10 minutes she uncovers them and applies BQQ sauce.
I think there may be a little brown sugar on the Kraut.
Anyway, I love them.

Went grocery shopping with Carol last night and we found a ring of Bologna. Not really a ring, more of a horse shoe.
Anyway, haven't seen one since I was a kid. My Mother used to bake one in a bed of baked beans with onions and pepers.
BTW, we were in the store for half an hour and standing at the checkout I suddenly realized I forgot to wear a mask.
Funny thing is no one said a word about it.

Last night we enjoyed some pork country style ribs from the grill and those good ole Rice Krispies potatoes. Funny, seems like we only have those potatoes when we grill either pork or chicken, never with beef. Might be a bbq sauce thing as I always use it on pork and chicken (with skin not skinless) but never on beef.

I sear the ribs for five minutes per side over hot coals then move them to the side of the grill with no coals under for bout 10 min per side. I put the sauce on first to get that nice sear.

Came home from a trip to the range today only to enter to the wonderful aroma of a pot of stew cooking. I knew there was a reason I kept this lady for the last 50 years.

Actually I'm lucky she's put up with me all these years.
