I made my living depending on my knives for... a long time. I've always liked high carbon steel knives mostly of the French chef type.
I ran across many Old Hickory knives in my thrift store hunt for steel. Their steel was interesting game but their style was to clunky for my taste.
Not long ago I learned about repairing and remaking knives.
I repaired a couple of my kitchen stock and then bought some new OH knives I did some grinding, redid some handles. I ended up making camp knives for my son's and a couple friends. I always make a custom sheath for the knife.
That's my camp knife that I carry in my bag daily.
