They are tasty. Wife calls them mini lobsters. Used to be in the creek behind our house, just haven't found any lately.

Caught and cooked a mess of them while boy scouting at Amarillo back in the sixties. Fried tails are excellent. I’ve done the Louisiana crayfish a few times. Ok, but not as tasty as those mini lobsters.

My X-wife and her family from Virginia cooked up crawdads all the time. I finally married a woman who likes real Lobster. :D

When I was a kid my family used to vacation at Lake Mary Ronan in NW Montana south of Kalispel. The lake has a great Kokanee population with some pretty large fish. For bait we used crawdad meat with a night crawler. It was up to us kids to catch the crawdads which for us was as much or more fun than catching fish. We would wait until dark and wade in the shallows with a net and a flashlight looking for the crawdads. Snag them in the net and then cut off the tails and remove the meat. Your post brought back great memories for me, thanks :D

Actually, Crawdads taste really good when done right. I have had them several different way that were cook by others and the Cajun crawdad dish was one to die for.
Soft shell crawdads were great Smallmouth Bass bait as we float fished down a river for many a good outing.
