Man Quiche
(adapted from Ham and Cheese Quiche by Sanda Lee, Food Network)
2 medium red potatoes, cubed (1/2 inch)
1 clove garlic, diced fine
1 tablespoon dried rosemary
¼ cup onions, diced fine
1 cup cubed ham (1/2 inch)
1 (8 or 9 inch) premade pie shell in foil pan, thawed
1 cup shredded Colby (or cheddar and Monterey jack cheese blend)
3 eggs
1 cup milk
1 teaspoon All Purpose Seasoning (McCormick) or Emeril Original Essence
1/2 teaspoon hot sauce (Tabasco or similar and maybe more)
Preheat oven to 400 degrees F.
Place potatoes, garlic, onions and rosemary in microwavable dish, stir. Cover with a damp paper towel and microwave (high) for 2 minutes, stir. Microwave, again, for 1/2 minute.
Cover the bottom of the pie shell with the ham, then the cheese, then the potatoes, etc. Place on a cookie sheet and set aside.
In a medium bowl, whisk together the eggs, milk, seasoning and hot sauce and pour into the pie shell.
Place cookie sheet with quiche into a preheated oven for 35-50 minutes or until eggs have just set and the top is browned.
Take out of the oven and let cool for at least an hour, cut and serve.

Sounds pretty good! The only thing I would change is the microwave part. Much better flavor by sautéing the ham and veggies in a pan rather than using a mw. But still probably tasty!

Looks great. Makes me want to get the "deep dish" version of the pie crust and add more good stuff like sliced mushrooms, diced green/red peppers and maybe some sauteed spinach.

Have a version of this in the oven right now. Sausage, bacon, ham, diced red potatoes, mushrooms, red onions, scallions (and a bit of spinach, since I had some), all sauteed in a pan. Some sharp cheddar and the egg/cream/half-n-half mixture.

I used to go to the Saturday Morning Men's Prayer Breakfasts held by our Deacon for my Baptist church in Kailua back in the early 80s. He supplied the breakfasts, we all kicked in a couple bucks at each meeting. He made a quiche similar to this one every third meeting or so, it was awesome. He also provided fruit, juice, and coffee every at every meeting.

Somehow, quiche got a bad rap in the 80s (or was it the 70s?), and I hadn't made/had any for years, but it turned out great. Pretty easy and pretty much all the food groups, right?

Except for, beer and candy, yeah.
I do remember having to come up with a "Quiche of the Day" in the early Eighties.
Very popular in the Fern Bars of the 70s.
