Oysters

when we are in the mood for oysters and plan to fix them at home, we usually buy them in the shell, clean them and then steam them .... we even made an oyster cleaner and steamer that has served us well for many years .... I made the basket by bending old style metal bread racks from a mountain country store into a basket that hold a half bushel .... fill it with mud covered fresh oysters in the shell and cut loose with a pressure washer .... flip the basket as needed and you and clean the half bushel in a few minutes .... the steamer is a commercial, stainless steel double boiler .... I drilled the holes in the upper section .... place it on a turkey fryer burner and you can steal a bunch of oysters in a hurry .... sadly, buying a bushel of oysters has priced itself out of our pocketbook .... now days we buy them already shelled by the pint or quart and instead of steaming we poach them .... to do so we purchased a thin muffin pan from Walmart .... the heat is provided by our Holland Companion Grill .... we poach the oysters in a mixture of drawn butter, lemon juice and garlic juice .... after being sufficiently cooked we keep them in warm in a cup of the same mixture .... we serve them on a saltine cracker .... my wife likes to sprinkle shredded Parmesan cheese on hers

Your poached recipe sounds really good. I love oysters, too, though I usually eat them raw and prefer them in the shell. There are several CT oyster farms that keep a steady supply of Blue Points available all year long, they're currently about $1 each. Yum.

can't handle them raw but have a good number of friends who do .... in our part of the country, most seafood is fried "Calabash" style

We're with you Stan...love them on the 1/2 shell. Been eating them that way our entire adult life. A little Mignonette sauce, topped with a little Caviar, or, just Tobasco and lemon! Love them!
might have to try the poached method sometime also. We do love them fried as well.

Love oysters, steamed, fried, smoked, poached, stewed, raw....... pretty much any way it could be possible to eat them.

for home use we have an Outset Cast Iron Grill Pan with 12 Oyster Slots... ours can be seen in the first thee pictures, the last two are promotional pictures .... being cast iron it is heavy and heavy duty .... it is too large to use with the grill we use at home and on the road .... at home we use it in the oven and while traveling we can use it with or 3 burner camping stove .... we've used it to cook oysters in the shell, on the half shell and shelled .... we are ordering a smaller one to use with our camping grill
