A note on a quiet Sunday afternoon.
At our first KC Get-Together dinner on Wednesday, I'm the only person who didn't have a BBQ meal. Instead, I opted for a spinach salad topped with a blackened salmon fillet (garnished with strawberries, feta, and tomatoes). I really like fish, especially prepared this way.
This photo I'm posting is neither the KC meal, nor a meal I planned. The daughter I live with purchases three prepared meals per week from the "Hello Fresh" company. Her younger sister works for this company, and we get a small "deal" on what we buy. These are very nutritious meals, and are delivered to our house each Tuesday fully ready to cook. My youngest daughter fits into her job perfectly -- her undergrad degree was in Nutrition and Wellness, and she loves to eat fresh foods. Anyway, the meal's ingredients are provided; I just do the culinary dance in the kitchen. It's fun.
Since I wasn't home much this week due to the two days of KC shooting, I caught up for lunch today with one of the "missed" meals. It was blackened barramundi with pineapple. I hadn't heard or had this fish before. Man, was it tasty, especially with the southwest spices they provided and a fresh lime squeeze.
So thought I'd post a picture. I don't know if it looks as good as the meal photos JEBar posted while visiting KC...guess that depends on whether one likes BBQ versus fish! I think both choices are great.
I will shortly take a Sunday-afternoon nap. Good way to let the tummy relax, right?!?

Don't worry about getting older and still doing stupid stuff. You'll do the stupid stuff as always, only much slower. Hold my beer and watch this.......

Never heard of that one. We like fish also. Matter of fact, last night we had Chilean Sea Bass. Pretty expensive so we don't have it often, love it though!

Barramundi is Asian sea bass.
When I forked into it, it flaked easily. Still was somewhat firm, and I was surprised how juicy it was at the same time. I'd have to say you would like it, because it is a "meaty fish." Not a fishy flavor at all, almost kind of sweet.
I've not looked for it in our delis, but I will. Probably will be spendy, but that's okay because it's so good!

I don't eat as much fish as I should, really like Salmon when the price is not too high for wild caught. I won't buy farm raised, it's always a crap shoot as to if it will be any good. Fred Meyer usually has Rockfish which I like and it's not too expensive. I agree Dave, wild caught is the way to go. Sockeye is good too. Both are pretty good when not over cooked.
Not hard to overcook Salmon and I don't like dry fish.
I am guilty of some occasional fried shrimp.

When I do my salmon it's just on some foil in a pan with some butter on top, 350 degrees for 20 - 30 minutes depending on how thick the filet is, some lemon juice and homemade tartar sauce. Mine is simple - mayo, chopped pickle and onion with a little bit of pickle juice.
I do my frozen popcorn shrimp in a 450 degree oven so fat content is not bad, problem is the box says it's 7 servings and it looks more like 2 servings to me.
