I have been to Spain with the Mrs. many times and by far my favorite Spanish dish is GAMBAS AL AJILLO, or Shrimp scampi. It’s prepared differently in every region but some things never change: Olive oil, tons of garlic, dry Sheri or white wine, lime juice, cayenne pepper or red pepper, parsley, shrimp and bread to clean up your plate.
Try it some time. The whole process only takes 20 minutes to prepare. The only trick: make sure the shrimp is dry and DO NOT over cook the shrimp.

For 2 lbs of shrimp:
4 table spoons of minced garlic.
4 table spoons of Olive oil.
2 table spoons of dry sherry or white wine.
Paprika or cayenne pepper to your liking. I like it spicy.
ESquared mantioned lemon juice instead of lime, Absolutely that will work also. 2 tablespoons.
Remove as much moisture as u can from shrimp by putting it in a strainer for an hour.
Don’t over cook. As soon as it turns orange, it’s done,
Bread for plate clean up.

Sounds great...have to pass it on to the wife! She still loves to cook; myself...not so much. BTW, do you serve it over pasta or rice or as is?
