this is a good one .... at first glance, its looks to be more complicated than it actually is
INGREDIENTS :
2 – 2 ½ pounds of beef , cut into 1-inch cubes
4 slices thick bacon coarsely chopped
1 white onion, chopped
1 shallot, finely chopped
2 cloves garlic, minced
4 tablespoons flour
2 cups beef stock
2 cups red wine (ideally Cabernet) or 1 cup brandy
2 tablespoons tomato paste
1 sprig of fresh thyme
2 tablespoons butter
16 oz mushrooms, sliced
1 cup pearl onions, skin removed
4 green onions, chopped
Salt and Pepper to taste
PREPARATION :
preheat oven to 450 degrees … select a 7 qt or larger oven ready pot, with lid … cook bacon until lightly browned, remove bacon and drain it on a paper towel … leave bacon drippings in the pot … sear cubed beef in bacon drippings until brown on all sides (beef can be seared in several batches so as to not crowd the pan) … remove beef and set aside … add onion and garlic, saute until translucent … put beef back into the pan with the onions and garlic … sprinkle flour over the meat and stir to help cover evenly … place in oven (uncovered) in the oven for 5 minutes … stir … bake for 5 more minutes … remove from oven and reduce heat to 350 degrees … add bacon, beef stock, brandy/red wine, and tomato paste … gently stir to combine ingredients … add thyme sprig, cover with lid, place back in oven and bake for 2 1/–2 - 3 hrs … an hour before the beef is done, melt butter in a pan and saute the mushrooms until brown … add mushrooms and pearl onions and continue to bake until the meat is tender … season with salt and pepper …. garnish with green onions …
NOTE #1 .... cut of beef chosen can affect cooking time, we use sirloin
NOTE #2 .... this recipe can be cooked in a slow cooker after the point above where the pot is placed in an oven for 2 1/–2 - 3 hours
