Dutch Oven Recipes

Post by ditto1958 » Wed Apr 13, 2016 8:18 pm

I have a nice Lodge cast iron dutch oven that I haven't used much lately. In the past, I was really happy with the way it cooked. I'm looking for ideas/recipes to do in it. Anyone have any good ones?

I can't share any yet, but I got a Lodge cast iron dutch oven on clearance a couple months ago up at camp. Can't wait to try it. I'm looking forward to see what pops up here.

I take mine to elk camp every fall. Just use the stove top(camp chef propane burner) but I usually do a pork shoulder roast with all the veges then a beef roast same way. Big hit! Use it at home too same way on the stove top low heat.

Upside Down Pineapple Cake :

1/2 cup butter
1 cup brown sugar
1 20 oz can unsweetened pineapple slices
1 can seedless maraschino cherries
3 eggs
1 box pineapple cake mix
1 1/4 cups juice from pineapple slices plus enough additional water
pecans if desired

pictures more or less follow this process ===> I prefer the Dutch Oven liners but can substitute aluminum foil, if foil, spray well with Pam .... melt butter ..... add brown sugar to thoroughly cover the bottom .... layer pineapple slices in the sugar .... add cherries and nuts .... mix batter using eggs and pineapple/water mixture and add it .... add coals and bake .... check after 20 minutes ... add coals as needed .... recheck .... lift aluminum liner out of oven and place it on a plate, place another plate over the bottom of the cake and turn it over .... talk about good

kind words appreciated .... the trick is to get it out of the Dutch Oven and turn it over without breaking the cake .... it helps to have 2 people to carefully lift the liner out of the oven and place it on a cutting board or other such flat surface .... place the glass bowl (for lack of a better term) that you can see in the picture .... with the cake between board and bowl, carefully but as quickly as possible flip it over .... with a little practice it works well
